.Abstract
Samples of cashew fruits were classified in a relatively manner in three different sizes: large, medium and small. The cashew apples of each size were pressed and the yield of pulp was determined. Another amount of cashew apples was dehydrated. We found dehydrate cashew apples had a better texture and flavor when cashew apples were peeled using pectinase 1.0 g/l in a buffer solution pof pH 3.5.
